The maturation cycle will ultimately have been shorter for this vintage. Vintage 2019 : a great success which confirms that the terroir is essential. The vines grow on clay limestone soil. Alcoholic fermentation is performed in vats for 10 to 14 days at temperatures between 26 and 32C. Throughout this process, the must is pumped over twice daily so as to
