Most of the fruit was destemmed and fermented on skins for around 12 days; but a small volume (c 15%) was fermented through carbonic maceration, to balance the savory earthy notes with brightness and fruit. 11 months aged in seasoned French oak, and bottled at Zig Zag Rd. This is a wonderful expression of Macedon Ranges pinot, which is both
