Two sections are at the bottom of the hills and enjoy cool, slightly moist growing conditions. These growing conditions allow the fruit to ripen very slowly, maintaining the fruits natural acidity levels and string grassy flavours. The remaining section is a small planting on top of the hill, exposed to the full summer sun which results in the development of a flavour structure that is
