Paul Bara Bouzy Rouge 2018 vincent-paris Rubacuori is an Italian wordHand harvest, whole bunch pressed in small presses (wooden and electric) using only heart of the pressings for all Champagnes. Each plot vinified separately with ferments in stainless steel and no malo (except for the Bouzy rouge). Only Annonciade sees 6 months of barrel ageing before 10 years ageing on lees. NV cuvees have up to 50% reserve wines added and dosage is 5g l for Annonciade up to 8g l for the non vintage cuves.
