In the winery the grapes were handled very gently and underwent cool fermentations in stainless steel tanks using selected yeast strains

It tastes marvellous served with nuts

A blend of 75% Syrah and 25% Grenache

Two styles of TBA are produced: Zwischen den Seen (between the lakes)

Dormilona Clayface Chenin Blanc 2022 moscatel-de-alejandría In the winery the grapesClayface Chenin Blanc is purely made in amphora. Hand harvested grapes from Yungarra vineyard, then destemmed into a large format Italian amphora. Allowed to naturally ferment on skins for one month. Then pressed off back to the amphora for settling before hand bottling. A bright young thing that is tutti fruiti now or for years to come.
