M. Chapoutier Ermitage Rouge ‘Le Pavillon’ 2019 nel naturally open fermentedThe Le Pavillon plot has an area of 4 hectares on soil composed of a thin layer of sediment, resting on a granite subsoil. This vintage comes from the oldest Syrah vines on the estate, between 90 and 100 years old. Vinification is traditional in concrete vats with one or two trappings per day for 4 to 5 weeks. Aging takes place for 18 months in oak barrels, 30% of the barrels are new. The first, very fragrant nose expresses notes of sweet spices
